白色至微**粉末或顆粒,有清涼甜味。甜度約為蔗糖的250倍。濃度高時略有苦味。甜味在口中不易消失。熔點196℃—198℃,耐高溫,在酸性及堿性溶液中較穩(wěn)定(ph5-7),易溶于乙醇。屬非發(fā)酵性類,故適用于難以加熱殺菌的食品,不會引起美拉德褐色反應(yīng),可保持制品白色,是天然甜味劑中較接近蔗糖的一種。作為無熱量食品的甜味劑,兼有降低血壓、**胃酸過多等作用;常作為甘草或蔗糖的增甜劑,并往往與檸檬酸鈉并用,以改進(jìn)甜味,主要用于苦味飲料、碳酸飲料、腌漬制品等方面。
